HMS Queen Elizabeth showed off her marine evacuation system during a recent safety trial.
To say that there is a lot of hype surrounding the Royal Navy's new carriers would be a vast understatement. But who can blame the Brits who have longed for a proper flattop since HMS Ark Royal was retired the better part of a decade ago. The Royal Navy knows their new carriers garner major interest so they been on a major social media offensive to let people see seemingly every step HMS Queen Elizabeth makes as it inches its way ever closer to initial operating capability. This week that process included testing the carrier's Marine Evacuation System (MES) as part of a broader Safety Of Lives At Sea (SOLAS) trial.

They look like they are made of plastic. ..is that safe assuming you'd often leave with fire on board/around? Or it might just be a colour coating for better visibility for rescue

The rafts are inflatable, so it is safe to assume they are plastic (not so much I think), rubber or rubber coated fabric. Unless flame retardants are mixed in the the material, yes, they will burn or at least smolder enough to cause concern from fumes.
The actual rafts would be in a fiberglass or metal container, so they would not be a fire hazard unless the containers are broken and then you have much bigger problems like oh say 1 ton warheads.
The color is for rescue at sea or so the enemy has better target acquisition to strafe you.
The color of the slide is for safety just like it is for normal life unless the expected use for it is to detach and to be used as a flotation device. Such a flotation device would worth maybe 15 minutes in the North Atlantic, then you are going to let go.
